Dairy, Free Radicals and
Allergies!

Allergies are caused by an overflow of free radicals in the
blood stream. Free radicals come from a variety of sources:
allergens (pollen, dust, mold, mildew, animal dander, etc),
undigested foods, and pollution are the main sources. The more
free radicals you have the easier it is to tip the balance with
allergens. Free radicals in the blood stream are also associated
with most of the big diseases (heart disease, cancer, stroke).

Antioxidants
remove free radicals from the blood stream. Vitamins A, C, and
E, selenium, QI0 are the most popular antioxidants. Antioxidant
formulas are available in the nutrition department of health
food stores.
Dairy is often
not properly digested. It is interesting to note that North
Americans are about the only culture in the world that ingests
milk products as adults. Most adults do not have lactase, which
is required to digest diary. Also, dairy is homogenized and
pasteurized in our culture and isn't recognized by the digestive
system as what it is and as a result is not completely digested.3
Therefore, it gives off free radicals. Diary can also be full of
hormones, antibiotics, steroids, pesticides and other unna1:ural
substances that were fed to the cow. These substances can also
contribute to ill health in a variety of ways.
Substitutes
for dairy: Rice and Soy milks and cheeses are available in
health food stores. Ghee is clarified butter -- the butter with
the milk fats removed -- and it is supposed to be better for
you. Olive Oil is a good substitute for butter in cooking. If'
you are concerned about the difficulty of switching, try part
regular milk and part rice or soy to begin and increase the
amount office milk until you've eliminated the dairy.
Wrong food
combinations may also contribute to the degree of free radicals
in the blood stream. For example, it takes different enzymes to
digest fruits and vegetables. Also mean and potatoes. If' you
eat these foods together, one digests, the other rots. The
undigested foods contribute to gas and to free
radicals.

Cayenne
pepper has
antihistamine properties. The heat of it can be cut by drinking
orange juice.5
When I was complaining of swollen glands and earlier had said I
had hadsQ~e cheese the previous day, Tom suggested I try cayenne
pepper to see if the glands would go down. Resaid glands can
swell from an allergic reaction and suggested making a capsule
of the pepper and taking it with orange juice. 1 tried it,
though I am not a big fan of hot foods. I made a capsule only
1/3 full and took it with a glass of orange juice. It took two
more glasses of orange juice in the next half hour to calm my
stomach to a level with which 1 was comfortable and within
minutes the pressure on my glands behind my ears lessened.
Within an hour the glands were significantly reduced in size and
discomfort. This, of course is something you would have to check
with a doctor to be sure you could do. If' you have any type of
ulcer or intestinal distress, heart problems, etc. this would
not be advisable. If' you do not tolerate hot foods, don't do
it! 1 have developed a taste for some hot foods since.

allergies
